Why I'm Not Losing Weight

I know I stated that I was on a mission to lose weight. I have been exercising at least 3-4 times a week. The only problem is I'm still bigger than I want to be. I am just maintaining my current weight, which is a whopping 170 pounds. My husband says that if I would've told him I weighed 170 pounds, he never would've believed me because I wear it well. (Aw. Thanks, hubby!) The only reason I wear it well is because I work out: I do the bike, stair-master, rowing machine, treadmill, and I lift weights. I see my cuts coming in my arms and legs but I am still a thick girl.


My problem is: I love to eat good food. I must say that GOD blessed me with the ability to make good food. My husband gets good loving and good food. Ha! (Side-bar Humor). Needless to say, I got him on lock. LOL. The thing that bothers me is he can eat anything and everything and not gain one single pound. Let me remind you: We eat the same thing. He is still lean and strong, and I am thick and strong. Yes! GOD made me strong but I want to be lean and strong just like my husband.


I am making a lifestyle change. I decided that I will eat more plant-based meals to speed along my weight-loss journey. It is possible to eat good plant-based meals and enjoy rich flavors simultaneously. Checkout what's for dinner today:


Scalloped Potatoes with Smoked Gouda




Ingredients


Vegetable Oil Spray

Yukon Potatoes

Kosher Salt

Ground Black Pepper

Italian Seasoning

Minced Garlic

Thinly Sliced Yellow Onions

Smoked Gouda

Heavy Cream

Parsley Leaves


My grandmother taught me not to measure. All you need to do to make good food is to "put your foot in it!" With that being said, heat the oven to 350 degrees. Coat your baking sheet with vegetable oil spray. Arrange your potatoes. Salt and pepper to your liking. Add your other seasoning. Sprinkle your onions and cheese on top. Pour your heavy cream all over it. Repeat if you want to make layers. Cook for thirty minutes covered with aluminum foil. Remove foil and cook again until crispy brown. Let rest for 10 minutes. Garnish with parsley.


Yes! You can have cheese and heavy cream on a diet. It's called Keto. There you have it! I think I'll go for a run on the treadmill today. See you when I'm ten pounds lighter. The goal is 20 pounds lighter but I will come out of hiding after I lose 10 pounds.
